·       DHANIYA POWDER ( CORIANDER POWDER)

·       PAANI ( MINERAL WATER)

·       SAUNF

·       AAMCHUR POWDER ( RAW MANGO POWDER )

VIDHI ( RECIPE ) :

Ek Kadhai Lein , aur bina stove pe rakhkar , sabse pehle Kadhai , mein Sarson Ka Tel ( Mustard Oil ) , Ek Badaa Chammach ( One Big Tablespoon ) Namak ( White Salt ) Dalein , Uske baad kataa hua Pyaaz ( Sliced Onion ) daalein , aur Lehsun ( Garlic )  ki teen ( 3 ) gaanth ya phali

Usi Sarson Ke Tel mein Daalein………

Kadhai, Ko Stove pe rakhein , aur Usmein dhule aur katey huye kaddu ( rinsed sliced Pumpkin) dalein aur Upar se Sabji Masala, Haldi ( Turmeric Powder ) Daalein, uske baad Namak ( White Salt ) aur Ek Kati Huyi Hari Mirch ( Sliced Green Chilli ) dalein aur , Ek Saboot Hari Mirch ( Whol;e Green Chilli ) Dalein , aur uske baad Laal Mirch Powder ( Red Chilli Powder) kaddu ki sabji parr dalein, phir usmein do cup ( two cups ) Paani ( Mineral Water ) daalein , aur phir Tamatar ( Tomato ) ko chaar ( 4 ) slices mein kaat lein aur Sabji mein daalein, uske baad upar se jeera aur saunf bhi daalein, uske turant baad Dhaniya Powder ( Coriander Powder) daalein aur Aamchur Powder , aur Ek Choti Kati Huyi Kacchi Aamiya ( Sliced Raw Mango ) daalein. Phir uske baad Nimbu ko Nichod( Squeeze ) karke uska juice upar se daalein……..

Aanch ( Flame ) Tez aur Dheemi Karte Rahein………

Paani ( Mineral Water ) sookh ( Evaporate ) ho jaane ke baad  Stove Ki Aanch ( Flame ) bandd( turn off ) karr dein……. Kaddu Ki Sabji Taiyaar Hai…….

VIDHI ( RECIPE ) :

 

Ek Kadhai Lein aur Usmein SARSON KA TEL ( MUSTARD OIL ) Daalein , uske baad kati huyi taroi mein Laal Mirch Powder , Aamchur Powder aur Ek Badaa Chammach ( Tablespoon ) Namak daalein aur uske baad kadhai mein sarson ka tel aur do kati hari mirchi aur kata hua pyaaz aur do lehsun ki gaanth daalein , uske baad kadhai mein do cup  paani ( mineral water ) daalein aur upar se jeera ,saunf, taroi ki sabji parr dalein , haldi powder , aamchur powder, nimbu ka juice, sabji masala, aur dhaniya powder daalein……

Uske baad aanch ( flame ) ko tez kar lein, kuch der ke baad kadhaai ko dhankh ( cover ) dein…….Baad Mein Aanch Bandd Karr Dein……..

Taroi Ki Sabji Taiyaar Hai…….

 

# 3 ) CHILLI PANEER

VIDHI ( RECIPE ) :

 

Paneer Ke Badee Tukde ( Slices ) karr lein , aur kadhai mein Sarson Ka Tel, garam karr lein , aur  kataa hua kheera (  sliced cucumber ) , kataa hua pyaaz, lehsun, daalein aur panner usmein daal dein , sabji masala, haldi , chilli paneer masala , LAAL MIRCH POWDER ,teen cup ( 3 cups ) paani ( mineral water ) daalein aur shimla mirch , bhi daalein, uske baad namak ( badaa chamacch ( tablespoon) ) daaalein , aur tez aanch parr pakaein…….. Upar se Nimbu Ka Juice daalein…….

# 4 ) PYAAZ KA PARATHA

·        GENHU KA AANTA ( WHEAT FLOUR )

·       AAMCHUR POWDER

·       NIMBU KA JUICE

·       NAMAK

 

VIDHI ( RECIPE ) :

 

Katee Huye Pyaaz ( Sliced Onion ) mein, laal mirch powder, NAMAK , NIMBU KA JUICE , AAMCHUR POWDER , milaa lein , uske baad genhu ke aante ( wheat flour ) ko bel karr usmein pyaaz ka ye misrann ( mixture ) daalein , tava parr thodi der sekein ( bake ) uske baad parathe ke dono taraf ghee lagayein…… Tava hatakar uss parathe ko bina tave ke aanch parr sekein dono taraf., ghee lagakar……

 Ek Kadhai mein SARSON KA TEL , namak,  do ( 2 ) kati huyi hari mirchi, tamatar, aur ek cup( one cup ) paani ( mineral water ) daalein , sabji masala, haldi powder, laal mirch powder , dhaniya powder , KHADA LAAL MIRCH , aamchur powder , nimbu ka juice, tez patta , daalein aur kadhai ko dhankh ( cover ) dein……

Katey Huye Choti Amiya ( Raw Mango ) ko kadhaai mein daal lein, uske baad usmein sarson ka tel  koota hua gud ( jiggery ), namak, jeera, saunf , khada laal mirch , ek sabot hari mirchi ,lehsun , pyaaz, aur do ( 2 ) cup paani ( mineral water ) daal lein, ek katori ( cup ) mein cheeni ( sugar ) aur paani ( mineral water ) daalein aur thodiu der use ubaal ( boil ) lein, uss syrup ko ek katori se galka mein daalein , aur uske baad alag se cheeni ( sugar crystals ) daal dein……. Tez Aanch Par Pakayein………

Ek Kadhai ,mein sarson ka tel, ghee, do kati huyi hari mirchi , jeera sasunf ,a ur uske baad bhindi daal lein , uske upar sabji masala, haldi powder , DHANIYA POWDER, EK SABOOT HARI MIRCHI , DO KHADA LAAL MIRCH, PAANI ( MINERAL WATER ) Aur Doodh Ki Malai ( Milk Cream ) daal dein , uske baad aamchur powder, nimbu ka juice DAAL DEIN……. Tez Aanch Parr Pakayein…….

Baigan ( Brinjal ) ko tez aanch parr bina kaatey senk ( roast ) lein , uske baad baigan ko kaat dein , aur kadhai mein sarson ka tel garam karr lein , aur usmein baigan daal dein , uske baad usmein , haldi powder , jeera , saunf ,dhaniya powder, pyaaz , lehsun , hari mirchi (  do ( 2 ) kati huyi ) daal dein, aur usmein ek cup ( one cup ) paani ( mineral water) , daalein aur sabji masala daal dein , uske baad upar se ghee daal dein……..Uske baad ek kata hua tamatar ( tomato) daal dein……..Tez aanch parr pakayein…..,.

Paani jab thoda bachh jaye toh aanch bandd karr dein……

BAIGAN KI SABJI TAIYAAR HAI…….

 

CHAWAL ( RICE )DO TAREEKE KE :

 

# 1) HALDI JEERA RICE:

 

Deadh ( 1(1/2) ) cup paani mein saaf Chawal ( RICE ) KISI BARTAN ( UTENSIL ) MEIN BHEEGA ( SOAK ) DEIN ……. Uske baad dheemi aanch parr Chawal chadakarr usmein ghee , haldi ,namak aur jeera daal dein……

Ubal ( Boil ) jaane ke baad HALDI JEERA RICE TAIYAAR HAI………

 

 2 ) GINGER GUD JEERA RICE :

 

Ek Cup Paani mein Chawal saaf karne ke baad kisi bartan ( utensil ) mein ubaal ( boil ) lein , aur usmein , ghee, jeera , kooti huyi adrakk ( ginger ) , namak aur koota hua gud ( jiggery ) daal lein , ubal jaane ke baad…….
